Enjoyed this one-dish wonder. First time cooking with curry. I doubled spices, except curry, as suggested but will probably bump this up also. Used frozen edamame in place of peas. This adds more protein. Also added yellow pepper. Very colorful dish. Great leftovers a Submitted by:

This dish is great - a wonderful combination of flavors, and textures if you serve it with hummus, tabouli, and nan. Next time I make it I plan to swap the potatoes for eggplant to cut down on the carbs. Can't wait for my leftovers tonight. Submitted by:

UNBELIEVABLE!!!! Make sure you add garlic, salt and pepper while browning your meat and onions. I added additional curry and also added cayenne powder. Make sure you taste and add the right amount of salt and pepper.....FABULOUS!!!!!

I had an overcooked roast beef, I put the beef in the food processor to ground it and added all other ingredients. I also used sweet potatoes. Turned out really well but would have better texture with ground beef. Great High Protien/Low carb dish! Submitted by:
