These were a big hit at a party today! Very moist.
I did add 1/3 c. water & some pumpkin pie spice.
Made 19 muffins which brought the calorie count down.

I added 1/2 cup applesauce to the mix , and added raisins. I got 24 small cupcakes done in wrappers. I would be tempted to try diced apple and nuts too if i had family that liked nuts. It was good with a light spread of reduced fat cream cheese as well. Submitted by:

This was okay. I am going to try making it again with a different carrot cake mix (couldn't find the brand listed in the recipe so we used another.) I added 1/4 cup of water and a handful of golden raisins and dried cherries. I used my mini-muffin pan so each mini-muffin is about 45 calories. Submitted by:

The calorie count was higher than I was comfortible with, so I used one can of pumpkin, 2 egg whites, 2 T fat free milk, and 1/2 a box of cake mix. This made 10 large muffins, equals 122 cal per serving. Submitted by:
