Tis is a very good and simple recipe. My husband can be a bit of a low carb snob but enjoyed it as well as the grandkids. It's so good that I'm making it for dinner again tonight.
FYI--I'm a low carber due to diabetes so I make my own low carb enchilada sauce to use.
