In Memphis, this is known as an "Idaho Pig." I used to get this all the time. Once in a while would be okay, but potatoes digest a little too fast for me to eat them often. Like other starches, they'll make your blood sugar spike. Submitted by:

This is a common way to have bbq in the South where I'm from originally. There are several bbq restaurants that served bbq stuffed potatoes. I wish they used the lowfat sour cream and cheese! Submitted by:
