I made this without the Flax Seed Meal, maybe that is why I didnt like the taste. It looked visually tasty though. I was surprised that it actuall got fluffy with only 1 minute! but the bottom of the muffin in my case tasted really really reeeaaallly like salty for some reason... Submitted by:

I've made this before but used Coconut Oil (which is GOOD for you) rather than the Smart Balance. You can also flavor it with sugar-free syrups and chopped nuts. This is a staple in my breakfast menu planning. Submitted by:
