Originally made this almost as printed except used 2 chicken breasts (about 12oz). Very good! It's a little dry using 10oz can Rotel, so now use 28oz can. I like to top it w/ nonfat Greek yogurt (it's like sour cream) and cilantro. Lots of veggies in this so portions are generous and satisfying. Submitted by:
