This was outrageously delicious! Instead of treating it as an appetizer, I treated it as a main dish and ate the entire amount for a 264 calorie lunch. I didn't grill the zucchini, either, just used it as chips to dip out the yummy mixture. Submitted by:

I tried this the other night with the following variations: I baked the zucchini in the oven at 350 with a spray of olive oil and salt and pepper until cooked thru. Then I spread on the pesto and sprinkled on grated swiss cheese instead and baked till melted. It rocked! Submitted by:

thats a tiny amount of cheese and pesto for each zucchini half! 1/8 tbs of pesto and 1/4 tbs cheese? why not bump that up a little, a few more calories but addedd protein etc? Also, what is that a pic of? Cuz its certainly not this recipe! Submitted by:
