I also added some pureed tofu as well because my daughter doesn't eat enough protein. She loves them and I make large batches and freeze them to pop in the toaster for her. Submitted by:

I am not allowed to eat breads on my current nutrition plan, but anything goes on my luxury days!
I love pumpkin, so I will definitely try this!
UPDATE: I added some oatmeal and ground flax seed meal. They look like fluffy cookies! MMmmmmm
