These were good. I used less oil and used unsalted chicken broth in its place. I also partially cooked the potatoes in the microwave to speed up the cooking of the potatoes. Submitted by:

adding the peppers do make it better, though very good as is. To really make it decadent, add the fat free cheese on top at the last moment and let it melt. Very yummy....

also adding squash from the garden makes it even better. A good way to get three veggies in at once.
