Recipe looks good. Not sure why people are saying would be healthier without this or that. Considering most muffins you'd buy are 250 calories plus, these are great. Soy is good for you. I'd agree replacing applesauce for oil. Nothing wrong with the rest though. Submitted by:

And how tiny are these muffins? They sound delicious, but I'm afraid if I make them in normal sized muffin tins they are just too many calories to be worth it. A one bite muffin to me is a tease- Like 1 Dorito or salted peanut. Submitted by:
