Love this! I add an 8oz block of reduced fat cream cheese. I cube and add about 1/2 hr before we eat, just enough time for it to melt.
My kids also love this! It's awesome with crushed Doritos, even as a cold dip with Doritos. Also awesome over baked potatoes.

The best thing about this recipe is that my daughter (who almost never cooks) and her hubby and kids really liked it so much, she said she'll do it!! I did a lower salt version with no salt added corn and low sodium black beans. I replaced some of the salsa with no salt tomatoes-cumin-chili. Yum. Submitted by:

I loved it! I'm on a low/no carb diet so I added the taco seasoning and a little more salsa and placed the finished product on a bed of spinach & boiled okras... then sprinkled some craisins on top. This was absolutely delicious, incredibly easy and filling!!! :) Submitted by:

Skip the corn - less fattening.
