Love this! I make asparagus this way all the time (sparkpeople recipe) Don't skip the cheese, it is so worth the calories and Parm makes it really sing! This is really good! I'm always looking for recipes for my toaster oven, and this is perfect! Could benefit with the addition of a little salt, pepper, basil, garlic, and olive oil spray. I like the asparagus idea, as well. Submitted by:

I am not a real fan of zucchini but will eat it sometimes.I will make a meal of it and I do use light margarine to cook it in.I have made zucchini sweet bread in the past and added berries for flavor and it was delicious.So zucchini does have its merits.
No cheese,I love cheese but to much fat.

AMAZING with alterations: lightly sprinkled the zucchini with salt, pepper, Italian seasoning and garlic powder before spraying with olive oil and sprinkling the parmesan cheese.
