Very delicious! I made a few additions: used ground chicken; used a can of Rotel diced tomatoes with the can of enchilada sauce and added about a cup of frozen corn. Garnished with a small amount of low fat sour cream and shredded lettuce. Very easy to make and great flavor! Submitted by:
