Absolutely melts in your mouth! Made this for guests at our cabin, along with the Amazing Pancakes (soy flour) Recipe, and both received rave reviews. I doubled the ham & cheese which made it extremely hearty for the men. This is a keeper! You should try it ... too delicious to be low-carb :) Submitted by:

I used plain greek yogurt instead of cottage cheese for the protein boost. It all blended well and tasted great with my turkey bacon. It was very filling and satisfying. Submitted by:

Made this today and it was great. Will definately make this again. DH liked it also. The only thing I did diffferent was, I had no ham so I chopped up some low fat turkey (sandwich) slices and put in place of ham. It was GREAT. Submitted by:
