I like the idea, but the execution was terrible. The egg did not help the breadcrumbs stick at all. I found sprinkling some flour on the zucchini before the egg helped, but I think next time I'll use a full breading technique (milk, flour, egg, breadcrumbs). More calories, but worth it. These were great. I halved the recipe because I only had 1 zucchini. I added some onion powder & a garlic/parsley salt blend. My hubby grilled some which came out really good & I baked some. The ones he grilled were crispier than the baked ones. Very, very good. Need to buy more zucchini! Submitted by:
