I really liked this! I followed the recipe exactly except for the cilantro- I substituted basil & left out the oil to cut fat. I'm not a fan of avocado but everything worked really well together! I can't wait to have the left overs for lunch. :) Submitted by:

Quick and easy to prepare. Was a massive hit with the missus, thank you very much MBH1118!
To cook the Salmon I used black peppers, and coarse sea salt, squeezed a little lime on top, and then placed the lime wedge on the salmon.
Drizzled a little olive oil on top and wrapped in foil then cooked.

Thanks for a "new" way to serve salmon--or other fish. A great summer salsa recipe also--left out the salt, used "no salt added" canned corn so virtually no sodium. Also, added peppers to 1/2 of salsa for some family members who like salsa with heat. Would also be good with grilled chicken. Submitted by:
