I've never been a big eggplant fan. This may have converted me! I cut the oil to 4 teaspoons and upped the balsamic vinegar to 4 teaspoons. This cut about 25 calories per serving. Submitted by:

I liked this, it went well with the eggplant. However there was not enough marinade. Next time I will either double or triple the recipe, or (in the interest of saving calories) maybe add some water to thin it down. Submitted by:
