great way to get in protein and fiber -- and any beans will do! I plan to vary by topping asweets with red beans cooked with onions and peppers.
Maybe another time I'll top with yoghurt and salsa . . . picante is my fav but I'll also try the mango salsa

This is a great lunch to make. Instead of cheese a use salsa for flavor and then add broccoli into the bean mix (or whatever vegetable I have on hand) to boost the nutrition even more. Submitted by:

My sister and I have a new favourite meal! It doesn't need any salt or spices - just sweet potato, beans, and a bit of cheese! Delicious in the microwave, and just a bit better broiled in the oven! Submitted by:

YUM! I microwaved my potato for 5 minutes, added a tiny pat of butter and a sprinkling of garlic powder then put on the beans, a little salsa, and the cheese. At first it seemed a little starchy, but it's perfect! I also think the nutrition facts are a little off on the high end. Submitted by:

Suprsingly tasty, and I don't even like beans! I may have doubled the cheese and used a few less beans, but this was super easy to make and packs in quite a bit of nutrition- I've found my new last-minute dinner! Submitted by:

I made this tonight for dinner, and it was a simple and tasty meal. I topped it with mango salsa and scallions, though I think I'll try it without for tomorrow's leftovers. Low fat sour cream may be nice on top too. Submitted by:

I prepare mine like a soup boiling sweet potato in organic Goya beans with garlic and cayenne for seasoning and top with cheese. Love the added fiber from the beans to fight cholesterol and to curb appetite from its slow digestive powers. Submitted by:

I love sweet potatoes and black beans, so the combo sounds great to me! You can never eat enough beans for low-fat protein and lots of nutrition. I'll skip the cheese and add salsa. Submitted by:
