This was FABULOUS!!!! My 1/2 of yam was 8oz. 1/4 cup of black beans and 1oz of whole milk mozz (cubed) then melted in microwave for 1.5 minutes. Total Calories 405. Thank You so much this was reaallllly YUM:) Submitted by:

This is a great lunch to make. Instead of cheese a use salsa for flavor and then add broccoli into the bean mix (or whatever vegetable I have on hand) to boost the nutrition even more. Submitted by:

YUM! I microwaved my potato for 5 minutes, added a tiny pat of butter and a sprinkling of garlic powder then put on the beans, a little salsa, and the cheese. At first it seemed a little starchy, but it's perfect! I also think the nutrition facts are a little off on the high end. Submitted by:

I prepare mine like a soup boiling sweet potato in organic Goya beans with garlic and cayenne for seasoning and top with cheese. Love the added fiber from the beans to fight cholesterol and to curb appetite from its slow digestive powers. Submitted by:
