This was VERY delicious. I used Greek Seasoning instead of the salt and added some japanese eggplant that I had in the fridge. EVERYONE enjoyed it. Submitted by:

This was a great recipe...I used canned fire roasted tomatoes and mushrooms instead of green pepper. Also, I topped each serving with crumbled reduced fat feta. Thanks for posting! Submitted by:
