I love roasted asparagus, but spray with a little olive oil and sprinkle with sea salt and ground pepper, can't go wrong. Also do the same thing with cubes of butternut squash and just roast longer, about 45 minues, turning occasionally. Sweet and wonderful Submitted by:

I can't wait to try some of these other suggestions! Even my veggie haters will eat any variation of this dish. My favorite: liberally sprinkle grated parmesan, lemon juice and kosher salt and cook just as directed here. Perfect for any weeknight or company. Be prepared for the compliments! :o) Submitted by:
