I love this recipe! I play with the spices a little each time I make it so I don't get bored. I usually make a large pot, dutch oven, full. Also, I have started adding a package of edamame (soy beans) for added protein. Submitted by:

Very tasty vegetable soup and very low calorie! One of my favorite recipes. One note: the chopped zucchini goes in at the end after it's boiled, and cooks just a few minutes until somewhat soft. Don't overcook the zucchini or it gets mushy. Submitted by:
