Honey is a natural form of sugar and enzymes made by bees, ants and aphids. We eat that made by bees. If you remove the sugar it's not honey anymore. There's no such thing as "sugar free honey".

"2 nectarines, unpeeled and sliced " Seriously?
Works also to just cut up fresh fruit and mix together with a little lemon....without adding more sugar!
