Like others here, I add black beans and corn, and this recipe is always a hit! We serve it wrapped in wheat tortillas with lettuce and low fat sour cream and low fat cheese. My family LOVES it, and I love that it's super easy to prepare, tastes delicious, and gets some veggies into my picky kids! Submitted by:

This was outstanding! This could also be used as the base for chicken nachos which is what I did! I added shredded lettuce, light sour cream, chopped tomatoes, chopped red onion, fat free refried beans, and fat free shredded mexican cheese and it was delicious! Thanks for this recipe! Submitted by:
