I too am diabetic, so this was a great idea and the cauliflower was not an odd substitute for the noodles/rice or potatoes. To reduce calories even futher, I used plain nonfat yogurt instead of the sour cream. Next time I may add a pakage of onion soup mix for a little more flavor as well. Submitted by:
