I made this today but made only 1/3 of the recipe. That made enough to thinly frost 12 cupcakes and a 8x8 cake. That will add only 34 or so calories per serving and, although there is not a thick layer of icing, it is enough to be satisfying and to put a few decorative sprinkles on top if desired. Great! I used the 1/3 less fat cream cheese, and I added a little more vanilla. It's tart, yet sweet. Perfect for the low fat carrot cake I made for my sister's birthday! Thanks for the recipe! :-) Submitted by:
