This tasted great! I used long grain brown rice and it was not cooked after the 50 minutes in the oven. If you simmer the rice on the stove for about 15 minutes first, then bake it should be perfect. And, I don't think the nutritional value is correct... I calculated about 309 calories per serving Submitted by:

I normally bake pork chops with mustard on top, but the kids liked this much better. I added a little 0-calorie cajun spice mix on top for extra flavor. Submitted by:
