I order this dish at a resturant, but didn't have the recipe. This is very close to what I had except I left off the Laughing Cow cheese and added collards to the sweet potatoes and beans. Really good! I doubled it just to use the whole potato so my husband had a snack after work and he LOVED them. I didn't have any pepper flakes, so I left them out, and used less cheese to reduce a few calories there. Great recipe!! Submitted by:
