I tweaked this a tad to fit my needs. Used applesauce in place of butter. 1 C rhubarb and 1/2 C strawberries for the fruit. Got 15 muffins at 109 cal each and 1 g fat. Used non stick spray for the tins and had no problem w/ removal - nothing stuck! :) Submitted by:

Needs some flavor so I added some chai garam masala spice mix and a bit of salt (that helps bring sweetness forward in your palette). The sticking problems I encountered were by fruit pieces that were in the side wall so do not over do it on the fruit. Submitted by:

These are really good! I added some wheat bran to increase the fiber and just put in 1 1/2 cups of strawberries since I don't like blueberries. So good! My husband loves them! Submitted by:
