I made this with a few adjustments. I used black beans for more fiber, used cream of chicken and added some diced tomatoes with chilies. Served it like a taco salad on top of rice, beans, baked chips, and greens. Reminds me of the lean cusine santa fe rice and beans! Submitted by:
