I cut the recipe in half, using only one potato for two servings. After baking the potato for an hour at 375F, I peeled off the skin, eliminated the maple syrup and sugar, and reduced the water to a tablespoon before mashing the mix and reheating it briefly in the microwave. Delicious! I love the idea of using the cooking water. I did not find the brown sugar necessary and I added some nutmeg as well because I just really like it. I serve this often with fish now. Thanks! Submitted by:
