When I'm in a pinch for a quick lunch for one, I put 2-3 oz. cubed rotisserie chicken, on a bed of fresh spinach, add onion powder and black pepper and half a slice of low fat pepper jack cheese and microwave for 1.5 minutes. Submitted by:

I added some sliced mushrooms and sauteed them with the spinach prior to mixing it together as well and did low fat sour cream. The topping was rich and made a lot so I may cut back on it a bit next time to save even more calories. Submitted by:

Delicious and will make again. The only problem is that the chicken was over cooked. I will try to either half cook it before adding the mix are not cook it before adding to the mix.
BTW: I used fat free sour cream and mayo and it was still delicious. I also chicken quarter thighs with the bones in

This recipe is great! I used 20 ozs of fresh spinach instead of the frozen kind. Also substituted the sour cream for non-fat cottage cheese, added some sweet peppers and mushrooms, served with couscous/rice/pasta- amazing! My boyfriend said he felt like he was eating at a restaurant! Submitted by:

So good ! My whole family loved this.. I subbed no fat greek yogourt for the sour cream, and sautéed an onion, and sautéed fresh spinach before mixing with the chicken. I also used the ready oven roasted chicken strips from Costco which save a lot of time/prep. Delicious.. the 3 of us ate it all Submitted by:

Wow..I just made this and it was deelish! I did change some things . I cooke the cubed chicken with garlic, onion, tumeric, a bit of sea salt & lemon pepper. Then I added fresh spinach, green peppers and tomatoes. Greek Yogurt instead of sour cream, grated parmesan cheese & minced garlic in mix. Submitted by:

I made it and loved it!! I used fresh spinach cut in pieces, 1/4 cup Mozzarelli Cheese, and 1 cup Parmesean...next time I will use less Parmesean as I try to trim down the salt. It will be a keeper. Submitted by:
