I just made this and it is so yummy!! I followed recipe, however, I fork shredded my boiled chicken and used reduced fat (2%) cheese shreds instead. Very good recipe and I will make it again making various tweaks to it, i.e. add diced green chiles, mexican corn, etc... Thanks!! Submitted by:

This looks great. I am going to make my own enchilada sauce. I will also add salt - I don't know why all of these recipes I have been trying don't call for salt. Salt really brings out the flavors and makes for a more satisfying meal. Submitted by:

I love this it's very good, and very very filling. My mom and I made this tonight for dinner (we did cut back the cheese a little and added some black beans). Next time we might add some green chilies, garlic powder, seasoning salt, green onions, and diced tomatoes. Thanks for sharing. It's Awesome Submitted by:

To spice up the "mild" enchilada sauce I had purchased I added chili powder, chili flakes, and cayenne pepper. I also added 1 large chopped green bell pepper, 1 cup black beans, and 1 cup of frozen corn. I used 4 cups of cheese to compensate for beans and corn calories. Will use even less next time. To make it a little easier I cooked my chicken in the crockpot with some seasonings, salt, pepper garlic, even onions and some green pepper. Then threw it all together cut the cooking time down a little bit. I did add some black beans to the mix. very tasty, Submitted by:

I LOVE this - but all those carbs are too much for me (and I want veggies). So instead of tortillas - just cut up 4-5 zucchinis and layer in the pan with some cheese (light Mexican) and a can of fire-roasted green chiles. Add chicken, pour on some GREEN enchilada sauce and bake! Lots of flavor!! Submitted by:
