My Bulgarian Friend's Pasta

Introduction

In college, my roommate who was from Bulgaria and I concocted this 'recipe' and it is total comfort food. Of course, back then it was with real bacon and real cream...so changes have been made to make it slightly healthier. Serve with a salad or some steamed veggies and voila!

Also, if you have time or have homemade tortellini or ravioli on hand this is perfect for that as well.

Ingredients



    1 pkg. Buitoni Refrigerated Pasta, Three Cheese Tortellini
    6 slicesTurkey Bacon
    Onions, 1 small - diced
    Olive Oil, 1tsp
    Mushrooms, 6 medium - sliced
    Fat free half and half, .5 cup
    Thyme, ground, .5 tbsp

Directions

Cook the pasta per directions.

Meanwhile, in a cast iron skillet or other heavy skillet cook the turkey bacon. Once it is cooked remove from pan and let drain on a paper towel, crumble it once it is cool.

In the same pan, add the olive oil to the bacon drippings and over medium high heat add the onion. (Optional: I throw a pinch of salt over the onions as it helps draw out their moisture.) Once the onions are halfway to being cooked, add in the mushrooms and continue cooking. The mixture should be very brown and caramelized looking when it is done, add the thyme and stir through. Then add the half and half. Once heated, add the bacon back in. By this time the tortellini should be done so drain that and toss into the skillet with everything else.
