Tom Yam soup (without condiments)

Ingredients

    water
    lime juice
    dried chilis
    fresh cili padi (birds eye chili)
    fish sauce
    thai chili paste
    kaffir lime leaves
    lemon grass

Directions

Bring water to a boil. Add lemon grass and kaffir lime leaves and allow to simmer for 56 minutes.

Put in condiments of choice eg. prawns, fish, mushrooms and add dried chillies.

Cook for 45 minutes. Add chilli paste, fish sauce, cili padi and lime juice. Adjust seasoning before serving. Dish out piping hot soup to serve with garnishing.
