Black Bean Soup

Number of Servings: 8

Ingredients

    2 large (751g) cans black beans - drain and rinse one can
    1 med onion - diced
    3 garlic cloves - minced
    2 tsp olive oil
    2 cans Rotel Tomatoes & Green Chilies
    1 Tbsp cumin
    8 Tbsp Reduced Fat shredded Mexican Cheese (divided)

Directions

Saute onion and garlic in the olive oil. Drain and rinse one can of black beans. Set aside. Blend one can with its liquid and 1 can of Rotel Tomatoes. Add cooked onion, garlic, cumin and blend again. Add blended mixture to stockpot. Add drained and rinsed black beans and one can of Rotel Tomatoes. Warm thoroughly. Serve each bowl with 1 Tbsp shredded reduced fat mexican cheese.
