This was a combination of a few things in my pantry, as well as a few suggestions from the SparkRecipe's baking substitution suggestions. I think they're a wonderful breakfast or dessert item. Ingredients

3/4 c. Sugar
2 cans pumpkin (not pumpkin pie mix)
4 small ripe banana's
3 c. Whole Wheat Flour
2 tsp. Baking Soda
2 tsp Baking Powder
1 tsp Salt
2 tsp Cinnamon
2 tsp. Vanilla
1/2 c. mini chocolate chips
***Half the recipe for less muffins***
Directions
Preheat oven to 425 degrees. Spray a 12-serving muffin pan with nonstick cooking spray or line with paper baking cups and spray insides with nonstick cooking spray. Set aside. In a large bowl combine banana,pumpkin, eggs, sugar, vanilla and stir well. Sift in flours, baking soda, baking powder, salt, cinnamon. Fill prepared muffin cups 2/3 of the way to the top, sprinkle tops with extra cinnamon. Bake 15-20 minutes, or until a wooden toothpick inserted in center comes out clean.

I made these today and they are delicious. My only question is, the recipe said to add the eggs but no eggs were listed in the ingredients. So I just added 2 and they turned out great. This will be a forever recipe as I like to keep yummy muffins in the freezer so making 36 at one time was great - 7/22/10

Thanks! I was copying a recipe I had from a cookbook, and I actually made substitutions. Error of mindless typing! See this link to substitute for eggs. I used the banana's in this recipe. A little bit of apple sauce works great too
