Chicken salad

Introduction

Adapted from the healing diet recipe (draxe.com). The original recipe adds 1 cup of sliced grapes and more mayonnaise. I left out the grapes because I didn't have any and used less mayo. Ingredients

    3-4 c. leftover, cooked chicken

    2-3 c. coarsely diced celery

    2 tsp. lemon juice

    2/3 c. Veganaise (with grapeseed oil)

    1/4 c. coarsely chopped walnuts

    2 tbsp chopped green onions

    sea salt and pepper to taste

Directions

Place all ingredients in a bowl and mix together until combined.

Makes about 8 1/2-cup servings
