Peasant Fish Soup

Ingredients

    1 - 28 ounce canned diced tomatoes
    1 - 28 oz can black beans
    12 ounces cod, cut in bite sized chunks
    1/2 cup red onions, chopped
    2 cloves garlic, crushed
    2 cups chicken broth
    1 tbsp extra virgin olive oil
    1 tbsp cumin
    2 tsp turmeric
    2 tsp black pepper
    1 tsp chipotle pepper, ground
    6 tbsp light sour cream
    black bean tortilla chips


Directions

Makes 6 servings.
Heat olive oil in large pot, add onions and garlic and cook til soft. Add tomatoes, black beans, chicken broth, and spices and bring to a simmer. Add cod and cook just til fish is opaque.
Serve with a tablespoon of light sour cream and a small handful of black bean tortilla chips.
