Ingredients

    1/2 Tbsp Olive Oil
    1 c Red Onion, finely chopped
    1 c Mango, peeled and diced
    1/2 c tomato, chopped
    1-1/2 Tbsp ginger, minced
    1/4 c Lime Juice
    2 Tbsp Orange Juice
    2 Tbsp Dry Sherry
    1-1/2 Tbsp Brown Sugar
    1-1/2 Tbsp White Vinegar

Directions

Combine all ingredients in a nonreactive bowl. Refrigerate until ready to serve.
