Spinach Scramble

Ingredients

    1/2 c Roma Tomato, diced
    1c Spinach leaves
    6 egg whites
    1-1/2 oz reduced fat feta cheese, chumbled
    1 Tbsp fresh Basil, chopped

Directions

Coat a pan with cooking spray, saute spinach and tomato until slightly tender. Remove and set aside.

Whisk eggs and add to pan. Cook, stirring, over med heat until almost set. Add vegetables, cheese, and basil. Cook to desired firmness.
