6 egg whites
salt & papper to taste
3/4 c mushroom slices
2 Tbsp scallions/green onions, chopped
1/2 roma tomato
1-1/2 oz reduced fat cheddar cheese, shredded
Coat pan with cooking spray, place over med heat. Add vegetables and cook until tender.
Add eggs and cook until bottom is set. Sprinkle cheese on top, folg omelet in half a cook until eggs are set and cheese had melted.
