Shorabat Addas (Red Lentil Soup)

Introduction

Creamy, filling, mild flavored soup. Simple to prepare. Creamy, filling, mild flavored soup. Simple to prepare.
Number of Servings: 8

Ingredients

    2 c. split red lentils
    8 c. water
    1/2 t. cumin
    1/2 t. turmeric or paprika
    1 large onion, diced
    2 cloves garlic, minced
    2 T olive oil
    pepper, to taste
    juice of one lemon
    2 bouillon cubes (optional)

Directions

Wash lentils. Add to water, bring to boil. Cover, reduce heat to simmer. Simmer for 30 minutes, stirring occasionally. While lentils are cooking, saute onion & garlic in olive oil until golden brown. When lentils are tender, add dry spices, bouillon, and onions. Simmer for 5 minutes. Remove from heat. Add lemon juice & stir. Garnish with chopped parsley and paprika, if desired. Makes 8 servings.
