Trisha's Turkey Rice Soup

Ingredients

    1 Turkey Breast Carcass
    2 Quarts Water
    Salt and Pepper to taste
    1 bay leaf
    1 small onion, chopped
    1 carrot, chopped
    2 cups chopped turkey
    1 cup frozen Cut Green Beans
    1 cup cooked White Rice
    1 carrot, sliced
    1 stalk celery, sliced

Directions

Cook carcass, bay leaf, salt, pepper, onion and 1 carrot in water for approximately 1 hour at a moderate simmer. Remove carcass and debone the turkey meat. Add turkey meat and remaining ingredients. Cook for approximately 20-30, until vegetables are tender.
