Strawberry Muffins

Introduction

Number of Servings: 12

Ingredients

    MUFFIN:
    3/4 c non-fat milk
    1/4 c unsweetened applesauce
    3 T egg white substitute
    2 c Whole wheat flour
    1/4 c sugar
    1/4 c Splenda
    2 t baking powder
    1/2 t salt
    1.5 c fresh strawberries (diced)

    TOPPING:
    1/4 c Whole wheat flour
    1/4 c brown sugar (unpacked)
    1/4 t cinnamon
    2 T butter (unsalted)


Directions

Heat oven to 400, grease 12 medium muffin pan or line with cups. Make topping by cutting butter through ingredients with fork until crumbly. Set aside. Whisk milk, applesauce, and egg. Stir in flour, salt, baking powder, and sugars. Fold in diced strawberries at end. divide evenly into muffin tins and top with 1 T of topping. Bake for 20-25 minutes. Makes 12 muffins. TIP: If you omit the topping, the calorie count goes down to 100. You can sub in any berry. Enjoy :)
