Bulgar, Tomato, and Chickpea Pilaf

Introduction

Number of Servings: 5

Ingredients

    1 cup bulgar
    1 cup chopped plum tomatoes
    1 cup scallions, cut into 1/2" pieces on the diagonal
    1/2 cup chopped parsely
    1-1/2 tsp grated lemon peel
    1/4 cup fresh lemon juice
    3 Tbsp olive oil
    1 can chickpeas, drained
    Generous dash hot sauce
    1/2 tsp salt
    dash pepper

Directions

Pour 1 cup boiling water over bulgar and let sit 30 minutes. Mix in other ingredients. Let sit for at least 20 minutes in rfrigerator before serving.
