Asian Beef Noodle Salad

Introduction

Ingredients



    1 Green Pepper, sliced
    1 Yellow or Red Pepper, sliced
    1 c. Scallions, chopped
    8 oz Rice Noodles
    1 c. Cucumber, peeled, chopped
    2 lbs Flank Steak
    3 T. Low Sodium Teriyaki Sauce
    3 T. Soy Sauce
    2 T. Rice Wine Vinegar
    2 t. Chili Garlic Paste
    2 t. Sesame Oil
    1/2 t. Ground Fresh Ginger Root
    1/4 c. Cilantro, chopped

Directions

Soak noodles in hot water until soft, combine with peppers, cucumbers and scallions. Broil flank steak 3-4 minutes per side - let rest and slice into 16 thin slices.

Combine remaining ingredients and toss with noodle mixture. Divide between 4 plates and top with beef.
