Potato Pancakes

Introduction

Wonderful served with applesauce and low fat sour cream. These are so easy with the blender, and fast. Wonderful served with applesauce and low fat sour cream. These are so easy with the blender, and fast.
Number of Servings: 10

Ingredients

    3 cups raw diced potatoes
    1/2 cup raw onions chopped
    3 large eggs
    1/4 cup whole wheat flour
    1/2 tsp salt
    dash of black pepper
    3 TBS fresh parsley

Directions

Put 2 cups diced potatoes in a blender along with the diced onions. Add 3 eggs and salt and pepper. Process until evenly mixed. Add flour and process til blended. Add the other cup of potatoes and blend a but, until just small incorporated and no large pieces are showing.
Bake on griddle sprayed with Pam.
Serve with applesauce and low fat sour cream.
Makes 32 pancakes. Can freeze leftovers.
