Ingredients

    e3 eggs beaten with 1 tbls water
    Hash Brown Potatoes 1 oz
    Chopped Peppers & Onions 0.25 cup
    Broccoli, cooked, 0.5 cup, chopped
    Red Ripe Tomatoes, .25 cup, chopped or sliced
    Black Forest Ham - 1 oz
    Swiss Cheese - Light (Finlandia - Imported), 1 serving
    Basil, 5 leaves
    Parmesan Cheese, grated, 1 tbsp
    *Vegetables, Mixed Salad Greens, 1 serving(s)

Directions

Beat 3 eggs with 1 tbls water
dice the potatoe, onion, tomato, pepper, ham, cheese,
In a 9" oven proof skillet, spray Pam and add potatoe, onion, pepper let cook 3 - 4 minutes.
add ham, and tomatoe cook 2-3 minutes.
When semi firm add the swiss cheese
Salt and pepper to taste
Top with Parmesan Cheese and place under the broiler for 5 minutes (keep and eye on it so it doesn't burn should be slightly colored on top)
cut into 4 pieces and top with basil and serve over mixed greens.
