Quinoa Tabouli

Ingredients

    1 Cup uncooked Quinoa
    3 cups (1 bunch) parsley Copped
    1 cup diced fresh tomatoes
    1 cup diced cucumbers
    1/2 c. finely chopped onion
    1/2 cup lemon juice
    1/4 c Olive oil
    Salt and Pepper to taste

Directions

Boil Quinoa for 15 minutes. Let cool. Add parsley, tomatoes, onion and cucumbers. Mix together oil and lemon juice and pour over salad. Let marinate together for several hours before serving. Makes 16 half cup servings.
