Easy Chicken Pie w/Puff Pastry

Number of Servings: 8


    1 TBSP olive oil
    2 cups chopped onion
    1/2 cup chopped celery
    1/2 cup chopped red pepper
    3 cloves garlic, minced
    1 10.75oz can Cream of Celery soup
    3/4 cup milk
    2 cups diced cooked chicken breast
    1 10 oz pack frozen mixed vegetables
    1 package dry chicken gravy mix
    1/2 cup chicken broth
    1 sheet Pepperidge Farms puff pastry


Makes 8 servings.
Heat oven to 400 degrees.

Heat oil in a skillet over medium heat; add onions and saute;
add celery and pepper and saute until soft;
add garlic and chicken and saute for a few minutes.
(At this point if you want you can add whatever spices you like or not at all)
Mix the can of soup, milk and gravy; stir until smooth and add to pan;
Add vegetables and chicken broth;
stir well to mix and let simmer for approx 5-10 minutes.

Spoon mixture into a 9-inch deep dish pie plate and cover with puff pastry. Crimp to seal. Either brush with egg, or I used some olive oil spray on top.
